A little spicy, a little sweet
Dove, such a controversial meat. I get it if you're skeptical of trying it, most people view wild game this way-uncharted territory. But at the end of the day, its important to my family and I that we know where our meat came from, the life it lived and how it was harvested.
Once you try Dove, you'll be counting down the days until season.
With tomorrow being the opening day for Dove season, I of course had to include a fan favorite from our arsenal.
Ingredients:
4 dove breasts
Cream Cheese
Fresh Jalepenos
Thin sliced bacon
salt/pepper
1 cup blueberries
1/4 cup sugar
zest of one lemon
1/2 lemon juiced
1 tsp cornstarch, 1/2 tsp water
Slice the dove breast into 1/4 inch strips, slice bacon into 4 inch pieces, halve and clean jalapeños ensuring you've removed all seeds and cut cream cheese into individual sized blocks. Set up an assembly line of jalapeño, duck, cream cheese and wrap with bacon, leaving seam along the bottom. Place them in the air fryer and cook until bacon is crispy. While these are cooking add blueberries, sugar, lemon juice and zest to a saucepan and bring to a boil. Stir continuously to ensure the sugar does not burn. Reduce to simmer allowing the juices to release. Mix together water and cornstarch and whisk into mix. This will help thicken the sauce. Spread the sauce on a pan and then place poppers on top or to the side. Be sure to allow the poppers to rest a few minutes to make the meal much more enjoyable.
